Crispy Chilli Oil Biang Biang Noodles

Wide-Cut Belt Noodles with Aubergine, Bok Choi and Crispy Chilli Oil

Wide-cut and deeply indulgent, Biang Biang “belt” noodles (Biángbiángmiàn) are a famed speciality of Xi’an in northern China. Taking our cue from the Silk Road city’s many noodle makers, these thick wheat noodles are paired with succulent cuts of aubergine and bok choi, and then finished with a glossy, crispy chilli oil.

MICROWAVE FROM FROZEN

  1. Remove film and open lid.   
  2. Add 1 tbsp water and replace lid loosely. 
  3. Microwave on full power for 4 minutes (800W) or 3 minutes 30 seconds (900W). 
  4. Carefully remove from the microwave and stir gently, loosening the noodles. Replace the lid loosely. 
  5. Cook for a further 3 minutes (800W / 900W).  Serve and enjoy.

What are Biang Biang noodles?
Biang Biang noodles (Biángbiángmiàn) are a famous speciality from Xi’an in China’s Shaanxi Province. Recognisable by their wide, belt-like shape, they’re loved for their satisfyingly chewy texture and ability to carry flavours.

Why are they called Biang Biang noodles?
The name is believed to come from the sound of dough being stretched and slapped against the work surface during preparation. “Biang” is an onomatopoeic word that imitates this distinctive noise.

What is crispy chilli oil?
Crispy chilli oil is a popular Chinese condiment made with chilli, aromatic spices and crunchy fried ingredients. In this dish, it’s enriched with Sichuan pepper, which creates a distinctive tingling sensation known as málà. It delivers depth, texture and complexity in every bite.

How spicy is this dish?
This dish offers a moderate level of heat, balanced by savoury flavours and vegetables. Alongside the chilli, Sichuan pepper provides a signature tingling sensation that creates warmth and complexity rather than intense spice alone.
