Chicken Khao Soi

Noodles in a Coconut Curry with Chicken, Herbs and Vegetables

It’s said spice traders brought the first Khao Soi (ข้าวซอย) to northern Thailand, but it was the noodle sellers of Chiang Mai who took this rich coconut curry to heart.  

This version brings a slightly thicker, aromatic sauce built on traditional ingredients like fingerroot, galangal and lemongrass, paired with wheat noodles to finish.

MICROWAVE FROM FROZEN

  1. Remove film, open lid to sit loosely. 
  2. Microwave on full power for 4 minutes (800W/900W). 
  3. Carefully remove from microwave, stir well to separate chicken pieces. Replace lid loosely. 
  4. Cook for a further 4 minutes (800W) or 3 minutes 30 seconds (900W). Serve and enjoy.
